Squires Kitchen’s Essentials CMC Gum is a versatile ingredient that is mainly used in modelling and flower paste recipes. Also known as cellulose gum or carboxymethyl cellulose, this useful gum works almost instantly to give strength and pliability to sugar pastes.
If you’re looking for a firmer finish when modelling, simply knead a pinch of CMC into the modelling paste to ensure the figure holds its shape. Squires Kitchen’s CMC Gum also speeds up the drying time of pastes and can be used in pastillage work, giving a whiter finish to paste than gum tragacanth.
