Squires Kitchen’s pastillage icing mix is made with cane sugar and free-range egg albumen to make a strong, structural paste.

Use Squires Kitchen Pastillage Powder to create a variety of firm structural pieces, such as models of buildings, cribs, shells, umbrellas, cradles, and even lettering. It can also be used for decorating extravagant pastry and confectionery, as well as for pillars, plaques and ornaments on larger cakes. Once mixed and rolled out, this pastillage icing can be easily cut, shaped and moulded by hand.

The handy resealable pack keeps the mix fresh once opened and any leftover pastillage can be stored and saved for your next project.

How thick can I roll pastillage?

Any thickness, from thin to very thick, as long as you allow ample time to dry flat once cut out.

How quickly will pastillage dry?

As with all sugar pastes, humidity affects drying time. A fairly thin sheet of pastillage can dry in as little as 30 minutes in a warm, dry room. Thicker paste drying in more humid conditions can take several days.

What is the best way to store dried and assembled pieces?

In a cardboard box on a sponge sheet or on a few sheets of kitchen paper, lightly packed around with white tissue paper. (If you use coloured tissue paper, colour may spread from the paper into the sugar so it is best to use white.) Add a sachet of silica gel to absorb moisture and store in a cool, dry place.

What should I use to cut out the shapes I require?

Depending on the design being created, anything including SK cutters, a sharp kitchen knife, craft knife or scissors.

Storage instructions
Unmixed: Store in a cool, dry place away from moisture. Mixed: Wrap the kneaded paste in a polythene bag and store in an airtight container in a cool, dry place or in the refrigerator for up to one month. Alternatively, freeze for several months.
Usage instructions
  1. Sift 125g of pastillage powder into a bowl.
  2. Add 25ml of cooled, boiled water and gently mix with a spoon to a very soft paste (it is important to use the correct amount of water).
  3. At this point, cover the mixture tightly with cling film and allow to stand for approximately 30 minutes to soften the gum tragacanth. (Please note: Leaving the paste to stand for 30 minutes after adding water will allow the gum to absorb the water and dissolve completely, thereby eliminating the possibility of tiny ‘spots’ of undissolved gum on the finished work.)
  4. After 30 minutes, stir the soft paste well then sift another 125g of Pastillage Powder into the bowl. Knead gently until all the powder is incorporated and the paste is smooth. The pastillage is now ready to use.
  5. Roll out to the required thickness and cut to size.
  6. When colouring pastillage, add glycerine-free food colour to the water before mixing.
